3 cans Black-eyed peas
1 pound smoked sausage
2 tablespoons oil
1 large onion, chopped
1 small can green chilies, diced
1 (14 oz) can whole tomatoes
salt and pepper to taste
Place peas in large stew pan and simmer. Slice sausage and put in a
skillet with the oil. Cooked until browned. Drain all but 2 tablespoons
of the oil from skillert. Saute onions in remaining oil.
Add onions with oil and remaining ingredients to peas.
Simmer for 30 minutes over low heat. Serve.
