Tostito Scoops or Frito Scoops (I use some of each)
2 cups frozen corn, thawed
1 cup canned black beans, rinsed thoroughly
1 bunch green onions, chopped including tops
1 cup cilantro, chopped
1 cup jar salsa (add a little more to suit your taste)
1 avocado chopped
Juice from 1 lime
Salt and pepper to taste (remember the chips are salty)
Mix well together and cover in refrigerator for at least 1 hour to allow flavors to meld together.
Spoon mixture into scoops and put on a tray to serve.
This is a great finger food for football parties. This should be enough to serve 8 to 12 hungry folks. If it is finger food for several hours then let people put their own dip on their chips because if you stuff the chips they will get soggy after 30 or so.
