This is enough to serve 5-6 if you serve with rice. This can easily be increased with one more can of beans and 1 more chicken breast or double easily.
2 cans black beans, drained & rinsed
3 chicken breasts, cut in short strips
1 jar thick & chunky picante sauce, I use medium but use what your family likes best
2 cloves garlic (I use jar garlic because I am lazy and can't seem to keep garlic gloves ready to use)
1 teaspoon cumin
1 tablespoon chili powder
1 to 1 1/2 cups shredded Cheddar or Mexican mix cheese
Cut chicken into strips. Stir-fry in 2 tablespoons Olive oil
Combine with all ingredients
Cover with grated cheese
Bake at 350 degrees for 25 minutes or until bubbly
I served with white rice and a nice garden salad for a complete meal. I bet is you had a little left over whole kernel corn about 1/3 to 1/2 a cup would be a great addition to this recipe.
