This gravy is great on mashed potatoes, chicken fried steak, or to use to dip chicken frien chicken strips in.

2 to 3 tablespoons drippings from fried meat or 2 to 3 tablespoons oil. Heat until hot but not burning and then add flour.
About 3 to 4 tablespoons flour so when mixed it makes a smooth creamy mixture.
Pour milk slowly (about 2 to 3 cups) into flour/oil mixture and stir constantly. Mixture will thicken as you cook it. If it gets too thick then put in a little more milk. It is better to add too little milk and then add more to thin gravy than to make gravy to runny.
Salt and Pepper to taste while cooking.

TIP: The dripping from the meat with little pieces of crust from the meat makes the best southern gravy. If you want a smooth white gravy then use oil in a clean skillet.
