Note: If you are lazy or in a hurry you can use a store bought
angel food cake, but homemade is better.
1 cup each of blueberries, strawberries and raspberries
Two thirds cup sugar
1 tsp almond extract
1 1-pound package angel food cake mix
Frozen whipped topping
Cut ends off of strawberries and wash all berries well. Toss berries in a bowl with sugar and almond extract. Chill in refrigerator while you bake the cake or at least 1 hour, stirring at least once so all the berries are in the juice the berries will produce. Bake angel food cake according to package instructions for cupcakes. Remove cupcakes from oven and allow them to cool. Slice each one in half and top with one quarter cup berry mixture followed by whipped topping.
Berries will remain fresh in refrigerator for 3 days if covered and kept cold, so you can enjoy this dessert for several days.
