4 tablespoons bacon drippings
1 medium onion, chopped
4 cups sliced summer squash (yellow crook neck)
1 can (4 oz) diced green chilies
Salt and pepper to taste
1/2 pound cubed processed cheese (Velvetta type)
Saute onions in drippings until transparent
Add squash, stir to coat with bacon drippings and cover
Cook over medium heat until squash is tender, stirring a few times
Add green chilies to tase along with salt and pepper
Stir in cheese and heat just until melted
This is 4 generous servings
