Select good quality steaks (Rib-Eye, New York Strip, T-Bone, Sirloin) in that order of selection. Marbling adds flavor.
**Beat meat with a mallet or poke with a fork to tenderize
**Marinate Meat (recipe below)
**Sear the steak on both sides (this LOCKS in the juices) I prefer a hot frying pan for this with a
very small amount of butter. Don't cook long, just about 30 seconds on each side.
**Sprinkle with pepper (optional) but NEVER salt
**Cook slowly on a BBQ Grill, flip a minimal number of times.
MARINATE: Juice of half a lime. Bottle of "Dry Roasted Tomatoes" from the salad dressing section of the store.
Put the meat in a zip lock bag after you have beat it or poked it with a sharp fork many times. Mix the the
lime juice with 1/4 cup of the dressing and pour over the meat in the bag. Depending on how many steaks
you are using will depend on the amount of marinate you will need. Turn or mead the bag a couple times
in the frig and it should be ready within 2 hours. Take out of frig. and shake off as much of the marinate as you can before doing the searing process and then pop on the grill.
THROW AWAY WHAT IS LEFT OF THE MARINADE. NEVER USE AGAIN.
