CHICKEN CASSEROLE WITH ZUCCCHINI, TOMATOES, CHILIES & CHEESE
Preheat oven to 350 degrees
1 cup cooked rice
3 medium zucchini, thinly sliced and parboiled
1 lare tomato, cut-up in little pieces
1 (7 oz) can - diced green chilies - drained - Ortega
2 cups cooked, diced chicken
1 pound grated moterey Jack cheese
2 cups sour cream
1 teaspoon oregano
1 teaspoon garlic salt
2 Tablespoons chopped green onions
1 Tablespoons chopped parsley for topping
salt & pepper to taste
Butter a large deep casserole dish. Place in the casserole dish in this order:
Rice
Chilies
Chicken
cheese
zucchini
tomatoes
Mix sour cream with oregano, garlic salt, green onions, salt & pepper. Pour over stacked ingredients.
You may sprinkle additional cheese on top if you wish. Bake at 350 degrees uncovered for 30 minutes.
