CAKE
2 c sugar
5 eggs, separated
1 stick butter or margarine (room
temperature)
1/2 c Crisco
2 c flour
1 t vanilla
1 t soda
1 c buttermilk
1 c shredded or flake coconut

ICING
1 box powdered sugar 8 oz cream cheese
1/2 stick butter or margarine 1 teas.vanilla
1 c chopped nuts

Oven 350 deg F, 25 minutes.
1. Cream butter, Crisco, and sugar
2. Add egg yolks, one at a time and beat well after each is added.
3. Add soda to butter milk
4. Alternately add buttermilk and flour to sugar mixture, stirring each in before adding the other.
5. Stir in coconut.
6. Stir in vanilla.
7. Fold in well-beaten egg whites.
8. Pour into three greased and floured 8-inch pans or a jelly-roll pan. (If you use 13x9x2-1/2 inch pan, cut amount of icing by 1/3, i.e., make 2/3 recipe.)
9. Bake 350 deg F for 25-30 minutes if in round pans. If in the 13x9 pan, the time is more like 35-40 minutes. In either event, test with a toothpick.
ICING, use electric mixer
1. Cream together butter (oleo) and cream cheese.
2. Stir in vanilla.
3. Stir in powdered sugar a little at a time.
4. Frost cake and add chopped nuts.
