View Full Version : SPINACH STUFFED ONIONS

8 large onions
1/4 cup lemon juice
2 packages frozen chopped spinach, drained well
1 cup mayonnaise
1/4 cup milk
Salt and Pepper to taste.
Peel onions. Cook whole onions carefully in salted water until tender but not mushy. Remove centers of onions
and leave a substantial shell. Chop onions centers and add to cooked, drained spinach. Combine mayonnaise,
lemon juice, milk, salt and pepper and add 2 tablespoons of mixture to spinach onion mixture. Mix throughly
and stuff onions. Place in serving casserole and top with remaining lemon mayonnaise mixture.
Bake for 30 minutes in a 350 degreen oven. Serves 8.
Recipe can easily be cut in half to serve 4.
