This recipe is from the PRESIDENTIAL COOKIES cookbook. Cookie recipes from each president, or his wife, some taken from archives. This recipe for Lemon Squares was a particular favorite of the Lyndon Baines Johnson family. The cook at the LBJ ranch kept these tangy bars in the freezer for presidential treats.

CRUST:
2 cups flour
1/4 cup sugar
1 cup butter (2 sticks)
1. Preheat oven to 350 degrees.
2. Mix first 3 ingredients as for a pie crust.
3. Pat into a 9 " x 18" x 1" greased cookie sheet.
4. Bake for about 15 minutes until very light brown.

FILLING:
2 cups sugar
1 teaspoon baking powder
4 Tablespoons flour
3 beaten egs
Juice and grated rind of 2 (two) LARGE lemons.
Powdered sugar to sprinkle on top.

1. Mix ingredients in the order given and pour over baked crust.
2. Bake for 15 to 20 minutes or until set,
3. When the pan is cool, cut into squares ans sprinkle them liberally with powdered sugar.

YIELDS: 24 squares
You may use a 10 x 15 x 1 inch jellyroll pan lined with non-stick foil for these squares.
Vary baking time depending on size of the pan.
