RECIPE POSTED FOR ROYOSFAN
Laura Bush submitted these fabulous cookies for inclusion in the cookbook of Presidential Cookies.
The recipe bakes up HUGE cookies. In the tradition of the Lone Star State, everything about these cookies is BIG.
For the second presidential inauguration of George W.Bush in January of 2005; 250 dozen of these cookies were baked up and served at one of the nine official inauguaral balls.
3 cups flour
1 Tablespoon baking powder
1 Tablespoon baking soda
1 Tablespoon ground cinnamon
1 Teaspoon salt
1 & 1/2 cups butter (3 sticks) at room temperature
1 & 1/2 cups granulated sugar
1 & 1/2 cups light brown sugar, packed
3 eggs
1 Tablespoon Vanilla
3 cups semi-sweet chocolate chips
3 cups old-fashioned rolled oats
2 cups sweetened flake coconut
2 to 3 cups chopped pecans (I omit the coconut and use 3 cups of nuts)
1. Preheat oven to 350 degrees.
2. Mix flour, baking powder, baking soda, cinnamon, and salt in a bowl.
3. In an 8 quart bowl, beat butter on medium speed for one minute until smooth and creamy.
4. Gradually beat in sugars to combine for 2 minutes.
5. Add eggs, one at a time, beating after each.
6. Beat in vanilla.
7. Stir in flour mixture until just combined.
8. Add chocolate chips, oats, coconut and pecans.
9. For each cookie, drop 1/4 cup dough onto an ungreased baking sheets, spacing 3 inches apart.
10. Bake 17 to 29 minutes until edges are lightly browned; rotate sheets halfway through (after 10 minutes).
11. Remove cookies to rack to cool.
For 6 dozen small cookies; use 2 Tablespoons dough for each. Bake at 350 degrees for 15 - 18 minutes.
Yields 3 dozen huge cookies.
I use an ice cream scoop to scoop out dough and shape cookies.
