12 thin slices fully cooked ham (deli dept. ham works great)
1 block (16 oz) Monterey Jack cheese, cut into 1/2 in. strips
2 cans (4 oz each) chopped jalaenos or chilies, drained
12 flour tortillas (6 inch)
SAUCE
1/4 cup butter or margarine
1/2 cup all-purpose flour
1 teaspoon ground mustard
1 teaspoon salt
1 teaspoon pepper
4 cups milk
3 cups (12 oz) shredded cheddar cheese
Place a ham slice, cheese strip and 2 teaspoons jalepenos or green chilies (for a milder taste)
down the center of each tortilla. Roll up and place seam side down in a greased 13x9x2 inch baking dish;
set aside. In a saucepan over medium heat, melt buter. Stir in flour, salt and mustard until smooth.
Gradually add milk; bring to a boil. Cook an stir for 2 minutes. Add cheese; cook and stir until melted.
Spoon sauce evenly over tortillas. Bake, uncovered, at 350 degrees for 45 minutes or until heated though.
Will serve 6 people 2 tortillas each.
NOTE: You can add a tablespoon of scrambled egg to each tortillas to make a breakfast dish.
