View Full Version : POTATO CHIP COOKIES IN A JAR

These are so good and taste like pecan sandies.
Most people think these are only to give as Christmas
presents, but I make them to give to hard to buy for
friends any time of the year.

1 cup granulated sugar
1-1/2 cups crushed potato chips
2/3 cup chopped pecans
2-1/2 cups all-purpose flour
1 teaspoon baking powder
In a small bowl, sift and stir together the flour and baking powder.
Layer ingredients in order given in a 1 quart "wide mouth" canning jar.
Press each layer firmly in place with a large spoon before adding next ingredient. It will be a tight fit.

On a tag, write the following instructions, and attach to the jar with a string or ribbon:

MIXING & BAKING INSTRUCTIONS:
1 cup butter, softened
1 teaspoon vanilla extract
Pre-heat oven to 350 F. Empty this jar of cookie mix into a large mixing bowl. Mix well.
Add butter and vanilla and stir until blended thoroughly. Shape into balls the size of walnuts, and place 3 inches apart on an ungreased baking sheet.
Flatten balls with the palm of your hand. Bake for 14 to 18 minutes or until edges are very lightly browned.
Cool 5 minutes on baking sheets then remove to wire racks to cool completely.

HINT: Be sure you sign the tag with a personal greeting (Happy Birthday, Have a Great Day, Merry Christmas, etc.) I sometimes tie a wooden spoon on the jar as an extra gift.
