1 1/4 cups biscuit mix
1 Tablespoon brown sugar
3 Tablespoons butter, melted
1/2 cup chopped pecans plus extra for garnish
1 cup, plus 1 Tablespoon confectioner's sugar (powdered sugar)
1 (8 oz) package cream cheese
2 cups Heavy Whipping Cream
2 (3 oz) packages instant vanilla pudding mix
2 1/2 cups milk
Preheat the oven to 375 degrees. Combine the biscuit mix, brown sugar, and butter, mix until crumbly.
Mix in the chopped pecans. Press into a lightly greased 13" x 9" glass pan. Bake for 10 minutes; Cool.
In a bowl beat 1 cup confectioner's sugar with the cream cheese until smooth.
Beat the whipping cream until stiff - (but DO NOT beat too much and turn it into butter).
Fold in 1 cup whipped cream int the cream sheese mixture. Spread over the cooled baked layer.
Prepare the pudding with the 2 & 1/2 cups milk. Pour over the cream cheese mixture.
Cover and refrigerate until firm. Fold the remaining 1 Tablespoon confectioner's sugar in to the
remaining whipping cream and spread over the dessert. Sprinkle liberally with chopped pecans on the top.
HINT: We melt a little butter - toss the pecans in the butter, put them in a pan and toast them in a 350 degree
oven until toasty and golden. Then we chop them up and sprinkle on the top of this dessert.
We use LOTS of pecans on top. It is yummy!!!!
