View Full Version : HOT AND SOUR SOUP

3 cans chicken broth
1/2 cup sliced fresh mushrooms
1/4 teaspoon ground ginger
1 boneless chicken breast, cut in strips
1/3 cup canned bamboo shoots, cut in strips
3 tablespoon rice vinegar
3 tablespoon soy sauce
1/2 teaspoon hot sauce
1/4 teaspoon pepper
1 egg white, beaten slightly
1/4 cup green onions, chopped
1/4 cup fresh snow peas (in the salad section of store)
1 tablespoon cornstarch
1/4 cup water
*Combine broth, mushrooms and ginger in 2 qt saucepan
*Add chicken and simmer 10 minutes
*Add bamboo shoots, simmer 5 minutes longer
*Add vinegar, soy sauce, hot sauce, and pepper, return to a boil
*Pour egg white slowly into soup stirring constantly (the egg white forms delecate strands as it cooks)
*Stir in green onions and snow peas
*Combine conrnstarch and water, add to soup and return to boil
*Boil 1 minute, stirring gently
*Yield: 1 quart
