View Full Version : GERMAN CUCUMBER SALAD

This is an excellent accompaniment to the Schnitzel recipe listed under German and Meat recipes.

3 Cucumbers
Salt
1 small chopped onion (I serve mine in thin rings)
1/2 cup white vinegar
2 tablespoons oil
1 tablespoon sugar
2 teaspoon water
2 teaspoon caraway seeds (optional)
1/2 teaspoon paprika
Salt and Pepper
*Slice cucumbers very thin, they can be peeled or left unpeeled. I like to peel every other stripe lengthwise
to add beauty to the dish.
*Sprinkle Cucumbers with salt and let stand at room temperature for 1 hour, then lightly rinse and drain
*Combine remaining ingredients and cucumbers and mix well
*Add salt and pepper to taste
*Chill before serving (I like to chill for at least 6 hours to give the flavors a chance to meld.
These will stay fresh in the frig if sealed tightly for a week)
