1/4 cup dark corn syrup
1/4 cup water
2 tablespoons soy sauce
2 tablespoons sherry
1 tablespoon corn starch
1 clove minced garlic or use jar garlic
1/4 teaspoon ground ginger
1 tablespoon oil
1 pound medium size shrimp, peeled
1 meduim tomato cut in wedges
1/2 cup green pepper in pieces
*Combine syrup, water, soy sauce, sherry, corn starch, garlic and ginger
*Heat oil in skillet
*Add shrimp, cook, stirring occasionally about 3 minutes
*Add sauce and remaining ingredients (green peppers and tomatoes wedges)
*Boil 1 minute, stirring gently
*Serve over rice
*Yields: 4 servings
NOTE: You can use chicken breast instead of shrimp if you wish.
