View Full Version : PASTA & GREEN CLAM SAUCE

2 cans (10 oz each) minced clams
1 cup chopped, fresh basil
1/2 cup chopped, fresh spinach
1/4 cup chopped, fresh parsley
4 cloves chopped garlic or jar garlic
3 tablespoons oil
1 pound linguine or spaghetti, cooked and drained
*Drain clams, reserving liquid
*Boil clam liquid gently until reduced by half
*Chop in food processor basil, spinach, parsley and garlic
*Add olive oil with processor running until a smooth paste is formed
*Lower the clam liquid to simmer and add all but about 3 tablespoons of basil/spinach mixture to pan
*Cook for 5 minutes
* Add the clams and reserved 3 tablespoons of basil /spinach sauce to pan
*Mix together and cook until clams are heated
*Remove from heat
*Pour 1/4 cup of sauce into large warm bowl (your can heat bowl under hot tap water and the dry)
*Add hot, drained pasta and top with remaining sauce
*Toss to coat evenly
*Yield: 4 to 6 servings
