Great Cajun Dish
1 pound dried red beans, picked, washed and soaked in water overnight. Drain and wash a couple times before cooking
2 tablespoon shortening or bacon drippings
2 qts water
3 cups chopped onion
2 bunch chopped green onions
1 cup snipped parsley
1 cup chopped bell pepper
2 large cloves garlic, chopped
1 tablespoon salt
1 teaspoon red pepper
1 teaspoon black pepper
1 tablespoon Worchestershire sauce
1 can (8oz) tomato sauce
1 can (16oz) tomatoes, diced
1/4 teaspoon oregano
1/4 teaspoon thyme
1 pound smoked sausage, cut into 1 inch pieces
*Cook beans in salted water, simmering 45 minutes or a little longer if you have hard water
*Add vegetables, shortening, seasonings, tomatoes and tomato sauce
*Cook slowly 1 hour, stirring occasionally
*Add sausage and cook 45 minutes
*Cool but do not refrigerate
*Reheat and bring to a boil and then lower heat, simmering 30 minutes
*Serve over rice
