1 pound beef round steak
2 tablespoon cooking oil
4 green onions, sliced; tops and bottoms
1 bell pepper, sliced into rings
1/4 cup sliced, pitted green olives
1 can hominy, drained
2 tablespoon cooking oil
1/2 teaspsoon salt
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon crushed red pepper
1/4 teaspoon dried oregano, crushed
1/4 teaspoon garlic powder
1/2 cup halved cherry tomatoes
1 cup shredded Monterey Jack cheese
6 cups lettuce
Lettuce Leaves
*Slice meat across the grain into very thin strips (it is helpful to partially freeze steak before slicing)
*Brown meat in skillet with 2 tablespoon cooking oil
*Transfer to bowl with slotted spoon
*Top meat with onion, green pepper rings, olives and hominy
DRESSING
*Add 2 tablespoon oil to skillet drippings
*Stir in salt, chili powder, cumin, oregano, red pepper and garlic
*Heat through, remove from heat
*Stir dressing into meat mixture, chill for 3 hours
*To serve toss meat with tomaotoes and cheese. Line bowl with lettuce leaves and top with torn lettuce and meat mixture
*Yields 6 servings
