2 lbs Eggplant
2 Green Onions (chop tops and bottom in chunks)
1 Green pepper
3 Medium Onions sliced
1 Bunch Parsley chopped
2 lbs Potatoes
2 lbs Tomatoes, ripened and peeled)
2 lbs Zucchini
Salt & Pepper to taste (start with 2-3 pinches)
Wash, seed, clean and chop all the vegetables in LARGE pieces.
Bake in a deep pan sprayed lightly for about 1 1/2 hr at 350 degrees.
This is enough to serve 6 people if this is your main dish. Cut recipe in half if using for a side dish or for small groups.
