I WILL GIVE A RECIPE LATER FOR THE PASTRY, BUT FOR THE TIME
BEING JUST USE A PREPARED FROZEN CRUST, MAKE OUR OWN OR USE A READY CRUST. THE PASTRY IS HARDER TO MAKE THAN THE QUICHE, SO FIRST GET COMFORTABLE WITH THE QUICHE AND THEN WE WILL PROCEED TO THE PASTRY.
TART FILLING (TARTE A' L'OIGMON)
1 lb brown onion (use sweet, or yellow onions)
2 egg yolks
6 Tablespoons heavy cream
40 gr butter (slightly less than 1/3 stick) a stick of butter is 113 grams
3 Tablespoons olive oil.
Peel and mince the onions ; put them in a non-stick
pan with the butter and the olive oil ;
add salt & pepper to taste.
Heat on medium, and fry them lightly for
15 minutes (they should get golden). Turning the onions with a wooden spoon is best, but not required.
Preheat oven to 425°F
In a salad bowl, beat the egg yolks, then add
the heavy cream. Mix with the onions.
Fill the pastry (pie crust with the onion preparation
and bake for 30 minutes.
HINT: You can steam broccoli (about 1/2 a cup) and add the tops cut in small pieces to the mixture before you bake it.
Serve hot.
