1 large can of salmon
1/2 cup of chopped onion
1/4 cup of chopped green bell pepper (optional)
12 to 14 saltine crackers crushed
1 egg
Corn Meal (enough to make mixture stick together)
Pour salmon into a bowl with juice and remove bones from middle (my cat loves these)
Add chopped onion, egg, green peppers (optional) black pepper, crackers and enough corn meal to make mixture
stick together. Make into patties about as thick as a mans thumb. The recipe should make around 6 or 7 patties.
Heat enough oil in skillet to completely cover bottom. When oil is hot add salmon patties.
Do not cook on high because the patties will get brown before done on the inside. Fry until golden brown.
Salmon patties are great served with homemade mashed potatoes and either a salad or English peas.
Serve patties with ketchup and tarter sauce. I personally like ketchup.
