New York Strip steaks
1 tablespoon olive oil
2 teaspoons black pepper
Sprinkle lightly with tenderizer if you want, and let steaks set for 15 minutes.
Heat grill. Rub steaks with oil and pepper. Place on gas grill over medium heat or on charcoal grill 4 to 6 inches
from medium coals. Cover grill. Grill 6 to 8 minutes for medium-rare or until desired doneness. Turning only once.
Place in platter and cover loosely with foil. Let stand 3 minutes. Serve with Cuban Green Olive Majo for an extra good steak.

MOJO SAUCE
1 cup loosely packed fresh parsley
1 garlic clove or 1 teaspoon garlic powder
1/2 cup sliced pimiento-stuff green olives
3 tablespoons orange juice
2 tablespoons olive oil
Place parsley and garlic in mini food processor; pulse until finely chipped. Add olives, orange juice and oil. Pulse just until combined. Sauce should still have some texture and not be smooth. (Sauce can also be prepared by hand) Sauce can be made up to 1 day ahead, covered and refigerated.
Serve sauce on table for everyone to put on their steak.

HERE IS A GREAT BREAD TO GO WITH THIS.

GREEN ONION CUBAN LOAF
Stir 3 sliced (chopped) green onions,
1/4 teaspoon garlic powder into 1/4 cup softened butter.
Slice 1/2 lb loaf French or Italian bread into 3/4 inch thick slices,
not cutting all the way though. Spread butter over slices (into loaf) and top of loaf.
Loosley wrap in foil, leaving top exposed. Bake at 400 degrees 5 to 7 minutes until butter has melted and top is browned.
This is enough bread for 4 people so increase if you are having more guest.
