3 cups all-purpose flour
3/4 sugar
1/2 cup chopped pecans
4 1/2 teaspoon double acting baking powder
1 teaspoon salt
4 eggs
2 cups shreadded zucchini
2 cups shredded carrots
3/4 grated lemon peel
1/4 cup oil
Preheat oven to 350 degrees. Spray 2 loaf pans with oil. In large bowl with fork, mix flour,
sugar, pecans, baking powder and salt. In medium bowl with folk, beat eggs, stir in oil, zucchini,
carrots and lemon peal. Then add to flour mixture just until flour mixture is moistened well. Bake 55 minutes.
