2 lbs fresh yellow squash
1 teaspoon salt
1/4 cup margarine or butter; melted
1/4 cup chopped onion
1/4 cup chopped green pepper
1/2 teaspoon black pepper
2 tablespoon sugar
1/4 cup water
3 slices of bacon
3/4 cup crushed crackers
1 egg, beaten
Cut squash in rounds. Add sugar, salt and water. Cook until just tender.
Fry bacon crisp and crumble. Saute onion and green pepper in bacon grease.
Drain and mash squash and then add margarine (melted) 1/2 cup of cracker crumbs,
bacon, pepper, egg and sauteed vegetables; mix well. Put in casserole dish.
Top with remaining crush crackers and dot with margarine. Bake 30 minutes at 350 degrees.
