6 medium potatoes
2 eggs, slightly beaten
1/4 cup sugar
1/2 tsp salt
1/4 cup white vinegar
1/2 cup milk
6 slices bacon (crisp)
1/2 cup onion, chopped
2 tablespoons mayonnaise
Cook in boiling water until soft, peel potatoes and then dice potatoes. Combine eggs, sugar, salt, vinegar and milk;
beat until smooth. Set asiide. In skillet, cook bacon until crisp. Remove bacon, reserving 1/4 cup drippings in skillet. Stir in egg mixture. cook over low heat, stirring constantly, until smooth and thick. Crumble 4 slices of bacon into egg mixture;
add to potatoes. Cool. Stir in onion and mayonnaise. Cumble remaining bacon on top. cover and chill 3 to 4 hours before serving
