I AM POSTING THIS FOR ROYOSFAN WITH HER WORDS INCLUDED.

2 to 3 Tablespoons bacon drippings (I am sorry - but this does not taste nearly as good if you leave this out)
2 cups coarsely diced onions
2 cups chopped green peppers
3 pounds ground sirloin
5 cups canned tomatoes
3 teaspoons salt
4 Tablespoons chili powder
1/4 teaspoons cayenne pepper
3 bay leaves
1/2 can of beer
( I like my chili REALLY HOT, so I also add a few chopped Serrano chili peppers to my chili -
but these are much hotter than jalapenos - so beware!!)
Saute in bacon drippings: onioins, peppers, and meat until the meat is cooked.
Add all remaining ingredients. Simmer for about 2 hours. Remove from heat, cover and refrigerate overnight.
To serve, reheat throughly, and serve. I put out bowls of sour cream (to cut some of the heat for the wimps of my house),
chopped onions, and shredded cheese. Some add toppings, some eat as is.
