THERE IS NO COCONUT IN THIS RECIPE, BUT YOU MAY ADD IF YOU WISH. RECIPE FURNISED BY ROYOSFAN WHO'S FAMILY DOESN'T EAT COCONUT.
Preheat oven to 350 degrees
2 cups sugar
1 & 1/2 cups cooking oil
4 beaten eggs
2 & 1/2 cups flour
2 teaspoons baking powder
1 & 1/2 teaspoon salt
3 cups grated carrots
2 teaspoons vanilla
2 cups chopped walnuts
2 teaspoons cinnamon
1 - 8 oz. can of crushed pineapple
1 teaspoon nutmeg
1/2 cup raisins
Sift dry ingredients, then add in remainder of ingredients one at a time and mix well.
Do not overbeat if you are using an electric mixer. Bake in a 9"x13" cake pan for 50 minutes.
Icing:
1 stick bitter
8 oz. pkg. cream cheese
1 box powdered sugar
1 tsp. vanilla
Let cake cool completely before frosting. If you have a platter large enough for the entire cake,
turn it out and frost all of the sides. Otherwise - just frost the top.
You may add coconut to the batter if you wish.
