INGREDIENTS
24 jalapeno peppers
1 pound hot sausage
2 cups all-purpose baking mix
1 (16 ounce) package Cheddar cheese, shredded
1 (16 ounce) package Monterey Jack cheese, shredded
1 egg beaten
1 package Pork Shake and BakePreheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking sheet or broiler pan.
Cut a slit in each jalapeno pepper. Remove and discard seeds and pulp. Try not to cut though the pepper, but if you do keep the halves close together so the right ones will fit back together.
In a medium bowl, mix uncooked sausage, baking mix, Cheddar cheese and Monterey Jack cheese. Shape sausage mixture around the jalapenos to form balls slightly longaded to look like eggs.
Dip each ball in egg and then in shake and bake and arrange on either a broiler pan or cookie sheet with sides because there may be grease.
Bake 25 minutes in the preheated oven, until lightly browned.
NOTE: This works best with canned or jar whole Jalapenos rather than fresh, but use whatever you wish.
