THIS RECIPE WAS GIVEN TO ME BY MY FRIEND BETHANY
1 cup butter (don't use margarine!)
2 cups sugar
3 cups flour
4 eggs
3 teaspoons baking powder
1 cup milk
1 teaspoon vanilla

1.Let butter soften at room temperature. Cream butter & sugar.
2.Add eggs, one at a time, beat well after each addition.
3.Sift flour & baking powder together. Add to creamed mixture alternately with milk,
4.beating after each addition.
5.Pour into 3 greased & lightly floured 9-inch cake pans.
6.Preheat oven at 350 degrees. Bake for about 30 minutes.
RESERVE 3 TABLESPOONS OF BATTER FOR PINEAPPLE Filling.
FILLING
1 large can of crushed pineapple
½ cup of sugar
Combine & cook in microwave oven at 60% power until thickened. I start out
cooking for about 5 minutes, take it out to stir, & repeat until thickened.
Cool. ADD 3 Tablespoons of reserved batter
FROSTING
2 egg whites, unbeaten
5 Tablespoons of water
1 ½ teaspoons of Karo syrup
1 ½ cups of sugar
1 teaspoon of vanilla
Place all ingredients, except vanilla, in top of double boiler over boiling water.
Cook, beating constantly on high speed, until standing in peaks for 7 minutes,
whichever takes longer. Remove from heat & add vanilla. Beat to combine.
Spread over cake.
NOTE: You can sprinkle coconut on cake if you wish to make it even better.
