2 pounds round steak, cubed
1 clove of garlic, minced or use jar garlic
2 cans (10 oz) whole green chilies, coarsely chopped
2 onions, chopped
2 cans (10 oz) tomatoes with green chilies
2 large cans of diced tomatoes
2 cups water
3 teaspoons beef bouillon powder or 3 cubes
2 large potatoes peeled and cut into small chunks
1/3 bag of whole kernel corn or small can (I use leftover corn)
Brown steak slowly in small amount of oil, add chopped onion and garlic.
Simmer for 5 minutes. Cook potatoes in stewer covered with water on high for 10 minutes.
Drain potatoes and stir in with other ingredients and simmer covered for 3 hours.
Serve with warm flour tortillas. Serves 8.
NOTE: If you have soft water you can add the potatoes directly to the stew. I only cook
them ahead of putting them in the stew because we have hard water and it takes a
while for them to cook.
