4 chicken breast, skinned and boned
Seasoning salt
White pepper and salt to taste
Vegetable oil
2 to 3 teaspoons fresh lemon juice
Chopped basil, about 1 teaspoon dried or 1 tablespoon fresh
2 Sticks of butter
Trim chicken breasts, rinse with cold water and pat dry.
Place chicken breast between 2 pieces of plastic wrap and pound with a
mallet or a small heavy skillet to an even thickness. Season breast to
taste with seasoning salt and drizzle with enough oil to coat. Cover and
refrigerate for 2 hours. Remove from the frig. and grill or broil until done.
In a skillet, place butter, lemon juice, pepper and salt. Heat, stirring,
until butter is melted. Remove from heat and stir in basil. Place chicken breast
on warm plates and drizzle with sauce. Serve it as desired with pasta or rice and a vegetable.
