4 Sweet Onions, thinly sliced
3 tablespoons butter
1 cup half and half
1 teaspoon salt
pinch of nutmeg
chopped parsley
1 tablespoon olive oil
2 eggs
2 tablespoons flour
1/8 teaspoon pepper
2 oz Swiss Cheese, grated
Prepare and partially bake a crust to fit a 9 inch pan, using a basic pie
dough recipe. Saute onions in oil and butter over low heat until gokden yellow.
Beat together eggs, half and half, flour, salt, pepper and nutmeg.
Then add onions and half of the grated cheese. pour into crust;
sprinkle remaining cheese on top and bake at 375 degrees for 25 to 30 minutes
or until golden brown. Garnish with parsley. Serves 4
You can use any sweet onion, but Walla Walla or Vadalia onions are the best
and Texas 1040 are next best. This is a very good side dish either pinto beans
or steak. Men love it!!!
