1 pound large white beans
2 cloves garlic, chopped or use jar garlic
1 tablespoon oil
2 teaspoon cumin
1/4 teaspoon cloves, ground
4 cups cooked chicken (cut up bite size or smaller) You can use canned if you don't want to cook
6 cups chicken broth
2 medium onions chopped
2 (4 ounce) cans green chilies, drained
1 1/2 teaspoon oregano
1/4 teaspoon cayenne pepper
Combine dry beans, broth, garlic and 1/2 onion. Bring to a boil. Simmer 3-4 hours
covered. Saute the rest of the onion in the oil. Add chilies, seasonings and
chicken to onion. Mix. Add chicken mixture to beans. Cook one more hour.
Serve with chopped avocado, tomatoes, green onion and grated Monterrey Jack cheese.
This is great with tamales and flour tortillas for a casual dinner fit for guest. Or with
corn tortilla chips for even simplier meal.
