3 cans (4 oz) green chilies. Seed and chop
1 pound Monterey Jack cheese, grated
1 pound Cheddar cheese, grated
4 egg whites
4 egg yolks
2/3 cup evaporated milk
1 tablespoon flour
1/2 teaspoon salt
1/8 teaspoon pepper
*Preheat oven to 325 degrees
*Combine in a large bowl grated cheese and green chilies, turn into
well-buttered, shallow 2 qt. casserole (12x8x2)
until stiff peaks form when beaters are slowly raised
*Combine egg yolks, milk, flour, salt and pepper in small bowl,
mix until well blended
*Fold beaten egg whites into egg yolk mixture
*Pour egg mixture over cheese mixture in casserole, and
using a fork, "ooze" it though the cheese
*Bake 1 hour or until knife inserted comes out clean
*Garnish with sprinkling of chopped green chilies if you desire.
*Yields 6 to 8 servings.
