RECIPE POSTED WITH PERMISSION OF ROYOSFAN.
Preheat oven to 325 degrees
One pound bacon (sometimes I use plain bacon, sometimes peppered)
One 8-oz. pkg. of cream cheese
One cup of freshly grated parmesan cheese
2-cartons of medium-sized fresh mushrooms
One stick of real butter
Take cream cheese out of refrigerator to soften while you are fixing the other items.
Pull the stems out of the mushrooms and wash throughly. Place mushrooms on paper towels
to drain while you fix the other ingredients. Take raw bacon and with a pair of scissors,
cut bacon up into little pieces. Fry bacon until crispy. Drain ALL bacon grease off of
bacon and spoon bacon onto a stack of paper towels and blot out remaining grease. Let bacon cool slightly.
In large bowl combine cream cheese, parmesan cheese and bacon bits. Spray your hands with
Pam (so everything does not stick to your hands). Squish everything together and mix well.
It really works best to do this with your hands. Spoon mixture into the mushrooms. Melt butter.
Place stuffed mushrooms on a baking sheet, cream cheese mixture side UP, and you may place them
fairly close to one another. Brush the melted butter over each mushroom. Bake until you see the
cream cheese mixture bubbly and the tops start to brown. I have a convection oven and usually
bake for about 8-10 minutes. Regular oven may take 15 minutes.
For a first course, buy large mushrooms and serve two to each guest.
These are so yummy, I have received marriage proposals when I serve them. ENJOY!!!!!!!
