2 cans of red kidney beans or pinto beans with liquid
3 medium onions, sliced and then cut in quarters
2 cloves of garlic , crushed or use jar garlic pieces
1/4 cup bacon fat or butter
7 medium or 4 large potatoes, diced
6 cups of water
2 bay leaves
1 teaspoon ground allspice
1 cup tomato paste
1 (10.5 oz) can of diced tomatoes with green chilies (optional)
Salt and Pepper
Saute onions and garlic in bacon fat until onions are golden brown.
Add onions and garlic to beans and other ingredients, except tomatoes with green chilies,
in large pot with about 6 cups or more of water.
Cover and simmer for 1 1/2 hours (until potatoes are soft)
Add tomatoes with green chilies (optional) I like them because it adds some spice to the
beans. NOTE: if you add the chilies when cooking the potatoes they will not get soft as fast.
Season to taste with salt and pepper, and cook 15 more minutes to meld flavors.
Remove bay leaves before serving, or avoid putting them in a bowl when serving.
This is great served with corn bread or warm tortillas.
