1 1/2 tablespoons butter or margarine
4 tablespoons flour
2 1/2 cups of chicken broth
2 1/2 cups tomato juice
1 can peeled tomatoes ( I used diced because I don't like the larger pieces)
1/2 cup rice ( I use 1 boil in bag)
grated cheese
Mix butter and flour in a saucepan
Add chicken stock, stirring constantly
Add tomato juice, and canned tomatoes with the liquid
Bring to a boil. Reduce heat and simmer for five minutes
Cook rice in another saucepan. Drain and add to the soup
Add black pepper to taste
Garnish with grated cheese in each bowl as desired.
Serves 4-6.
