View Full Version : TOMATOES STUFFED WITH AVACADO

8 large tomatoes
2 avacados
Juice of 1 lemon or lime (I like lime best)
1 tablespoon minced onion
1 clove garlic, crushed or a jar garlic
Salt and Pepper
Chili Powder
2 tablespoons chopped celery
4 tablespoon green pepper chopped fine
2 tablespoon chopped parsley
Slice off the top of the tomatoes and scoop out all the pulp and seeds.
Invert tomatoes on a tray to drain and put in refrigerator until ready to fill.
Peel and mash the avacados. Add juice, onion, garlic, salt, pepper and chili powder
to saste, celery, green pepper and parsley. Mix well.
Fill each tomato with the avacado mixture just before serving.
