PANCAKES
3/4 cup of flour
1/2 teaspoon salt
1 teaspoon baking powder
2 eggs beaten
1 cup milk
1/2 teaspoon vanilla
Sift flour with salt and baking powder.
Add beaten eggs, milk and vanilla and mix.
Spoon about 2 tablespoons of mixture into small buttered frypan.
Tip frypan to spread mixture. When bubbles break, turn pancake and cook on other side.
Set aside.

FILLING
3/4 pound (12 oz) cooked chopped spinach
1/2 pound (8 oz) cottage cheese
3 eggs, lightly beaten
2 tablespoon Parmesan cheese
1/2 cup heavy cream (whipping)
Drain spinach well. Combine cotttage cheese, eggs, Parmesan cheese and cream
with the spinach. Mix well.
Spread each pancake with the spinach mixture and roll up. Place seam side down
in a well-buttered baking dish and chill. Remove from refrigerator 1/2 hour before baking.
Brush each pancake with butter and bake in a 350 degree oven for 20 to 30 minutes
Serves 4-6
