This classic holiday side dish has an extra kick from a bit of ground ginger.
3 cans (15 oz each ) sweet potatoes, drained
1/4 cup ( 1/2 stick) butter, melted
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground nutmeg
3 cups miniature marshmallows
Preheat oven to 350 degrees. Beat sweet potatoes, butter, and spices in medium bowl with electric mixer on medium speed until well blended.
Spoon into lightly greased 1 1/2 guart casserole dish, top with marshmallows.
Bake 15 to 20 minutes or until potatos mixture is heated though and marshmallows are lightly browned.
Makes 10 servings, 1/2 cup each
