1 3/4 cups all-purpose flour
3/4 cups sugar
3/4 cups cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoons pumpkin pie spice
1/4 teaspoon salt
1 cups buttermilk
2 cups or 1 can of pumpkin
1/2 cup dark brown sugar
1 eggs, room temperature
1 egg whites
1/4 cup canola oil
1/4 cup Agava Necture or Honey
1 tablespoons vanilla
Preheat oven for 350 degrees. Prepare a 12 cup bundt pan with cooking spray.
Whisk together dry ingredients (flour, sugar, cocoa, baking powder and soda, pumpkin pie spice, and salt in a large bowl.
On low speed, mix buttermilk, pumpkin puree and brown sugar. Beat in eggs and egg whites. Stir in oil, agave and vanilla. Gradually add dry ingredients until just combined. Transfer mixture to bundt pan.
Bake for 1 hour to an hour and 15 minutes. Cool completely on wire rack. Remove from pan. Place one cake upside down on serving plater or plate.
Sprinkle with confectioners sugar or glaze (whisk together 1/4cup confectioner’s sugar with 1 1/2 teaspoons milk.
