TURTLE PUMPKIN PIE

1/4 cup plus 2 tablespoons caramel topping, divided
1 Graham Pie Crust
1/2 cup pecan pieces
2 tablespoon pecan halves
1 cup cold milk
2 packages (4 oz size) Vanilla Instant Pudding and Pie Filling
1 cup canned pumpkin
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 tub (8 oz) Cool Whip type Whipped Topping, thawed and divided

POUR 1/4 cup caramel topping into crust; sprinkle with 1/2 cup pecan pieces
BEAT milk, dry pudding mixes, pumpkin and spices with whisk until blended.
Stir in 1 1/2 cup whipped topping. Spread onto crust. Top with remaining whipped
topping.
REFRIGERATE 1 hour or more. Top with pecan halves and drizzle remaining caramel topping
on top of pie with a folk. Store leftovers in refrigerator.
MAKES 10 servings, one piece each.

HINTS: If everyone in your family doesn't like pecans or caramel, then make a plain pumpkin
pie to go along with this one by buying a large 303 can of pumpkin and follow the recipe on the back
of a regular size can of pumpkin after taking out the 1 cup for the Turtle Pumpkin Pie recipe.

I like to use Pumpkin Pie Spice rather than messing with all the different spices. So if you do too,
then use 1 1/2 teaspoons of Pumpkin Pie Spice instead of cinnamon and nutmeg.
