View Full Version : CRANBERRY SAUCE

1 package fresh cranberries
(usually in the stores by Nov. 15th)
Don't put off buying them too long or
they will sell out.

Rinse cranberries and put in medium pot
Add 1 cup of water
Zest of 1/3 orange
1 1/4 cup of sugar

Add all ingredients and bring to a boil. Stir from time to time while boiling on medium low heat until cranberries begin to burst.

Pour cooked cranberry mixture into heat proof bowl with sealable lid and allow to cool without lid. Put on lid and store in refrigerator until set (at least 6 hours). Cranberries will last in refrigerator for up to two weeks.

Hint: When cranberries are in season I buy several packages and cook them all together with or without the orange zest depending on my mood, and then pour them in sterile 8 oz jars and seal them with sterile lids and seals. Turn them upside down on the counter top until top is sucked in and you have cranberries for the entire year. I normally can up to 12 half pints which is about 4 packages of cranberries. What is left from canning you can just put in a bowl with lid and eat it first.
