8 large zucchini
1/2 pound chopped beef
1 onion, finely chopped
1 tablespoon oil
1 clove garlic, crushed
2 tablespoons chopped parsley
1 egg, beaten
1 tablespoon Parmesan cheese, grated
4 tablespoons boiled rice
pulp from zucchini
salt and pepper
Boil zucchini in water for 3 minutes. Slightly cool. Cut in half lengthwise and scoop out pulp being careful not to break the skin. Reserve pulp.
Saute the beef and onion in the oil until cooked.
In a bowl combine the garlic, parsley, egg, cheeese, rice and zuccini pulp. Mix well and season with the salt and pepper. Add to the meat mixture. Blend well.
Fill zucchini shells with the mixture and bake in a lightly sprayed casserole dish in a 375 degree oven for 20-30 minutes.
This serves 8, so cut recipe in half if needed.
