Combine to make a Cajun Rub: (this rub is also excellent on other meats cooked in the oven or on the grill. Make a bowl full and keep covered In your pantry to use for other meat)
1 tablespoon ground black pepper
2 teaspoon paprika
2 teaspoon chili powder
1 teaspoon garlic salt
1 teaspoon crush fennel seed
1 teaspoon dried thyme
1 teaspoon oregano
1 teaspoon sage
Brush a 10 oz trimmed pork loin with oil.
Rub the Cajun Rub into the meat, covering completely
Roll the pork loin in fine ground cornmeal until covered.
Place on a rack over baking pan
Bake in 350 degree oven for 25 to 30 minutes to an internal temp. of 165 degrees.
Rest for 5 minutes before slicing
This will serve 2 adults. Double or triple the recipe for a large family.
