Ingredients:

3 cup carrots\grated, shredded
2 Jonathan or Macintosh apple, washed, cored and diced
1/4 cup chopped walnuts
4 tsp. red wine vinegar
1 tsp. Dijon mustard
3/4 tsp. salt (optional) Don't add salt if wanting a low sodium salad
1/4 tsp. pepper
2 Tbs. olive oil
Cooking Directions:Combine carrots, apples and walnuts in a salad bowl. Combine remaining ingredients in a jar with a tight-fitting lid. Shake vigorously.
