APRICOT/PINEAPPLE CRUNCH CAKE

Recipe can be cut in half for small families by using a 1 layer cake mix
and smaller amounts of fruit and 1 stick of butter in 8x8 pan.

1 jar apricot preserves
1 large can crushed pineapple with liquid
2 sticks of melted butter or margarine
1 yellow cake mix

Spread crushed pineapple in the bottom of 9x13 pan
Dot apricot on top of pineapple
Sprinkle cake mix on top of fruit
Drizzle melted butter on cake mix

Bake cake in 350 degree oven about 30 to 40 minutes until
golden light brown. Serve warm with whipping cream or
ice cream. Also excellent at room temp.
Store leftovers in refrigerator.
